Look at the size of the kitchen knifes and the hand of Anthony Sargeant who is about to fillet the fish giving some indication of its size. It will yield many good thick portions from either side of the backbone. It has an excellent flavour – superior many think to Cod – but it is under appreciated here in the UK. Consequently the majority of the British catch is exported to Spain and France.
