Fillet of Wild Sea Bream – from a Cornish Day-Boat

Anthony J Sargeant carefully filleted this wild sea bream and pan fried it to give a crisp skin and perfect flakes of white fish. It was served on a bed of leeks with a few new red skinned potatoes. The large Bream was super fresh and the thick fillets cooked perfectly. it was bought from Barkworths Fish Stall in Shrewsbury’s Indoor Market (highly recommended).
